Ingredients:

2 tablespoons butter
- 3
eggs
- 1/4
cup finely chopped green bell pepper
- 1/3
cup finely chopped onion
- 8
– 10 medium shrimp, cooked & peeled
- 1/4 cup
crabmeat
- 1/4
cup Monterey Jack cheese
- salt
and pepper to taste
- Sting
Ray Hot Sauce
Melt butter in skillet. In mixing bowl, beat eggs
and whisk in green pepper, onion, salt and pepper. Pour mixture into
hot skillet. As the edges of the omelet begin to set, reduce the
heat somewhat and with a spatula turn the omelet over to cook other
side. Add shrimp, crab
meat and cheese. Gently
fold top over and let cook until cheese is melted.
Serve topped with Sting Ray Hot Sauce.
